If you're like me, you run out the door in the morning hoping that you have everything you need for the day. As you back out of the driveway, you go through a mental list:
Coffee? Check.
Phone? Check.
Lunch? Check-ish. More like random things on the top shelf of the fridge thrown in a bag.
Work necessities (paperwork, calendar, etc.)? Um...hope so because I'm already halfway down my street and I'M NOT TURNING AROUND TODAY!
Yeah, that's my normal morning. So when I was challenged to do the Whole30 one of my first thoughts was that I was going to have to get my stuff together. And I don't mean get it together the night before. I knew that if I was going to do this and have any chance of succeeding, I was going to have to get myself together on Sunday afternoon when there are no distractions (other than Netflix). So, that's what I did. And I'm happy to say that I've successfully made it through the first week of the Whole30 AND as an added bonus I've had very nice mornings.
What's the key to my success (other than a lot of prayer and I picture of myself 50 lbs. lighter on the fridge)? Pre-made breakfast.
Most people in working America don't get to eat a hot breakfast every morning, or any morning. I sure didn't. Ain't nobody got time for that! But with just several ingredients, 45 minutes on a Sunday afternoon, and a microwave in the morning, I'm eating a very healthy, hot breakfast every. single. morning. and it's awesome!
Make-Ahead Frittatas
Ingredients:
9 eggs
3-4 Aidells Apple Chicken Sausage (depending on how much meat you want)
Several handfuls of chopped spinach
Several handfuls of chopped peppers
Any other veggie you want to add!
Directions:
Preheat the oven to 375 degrees. Beat together 9 eggs in a large bowl. Add your sauteed sausage and veggies and stir well. Coat muffin tin thoroughly with EVOO. Use a ladle to spoon out your egg mixture into the muffin tin. Fill each one about 3/4 of the way. Put in the oven and bake for 25-30 minutes. When done (all eggs are cooked and firm), let them sit for a few minutes and then pop them out and into a storage container. You can freeze them if you want, but I just put mine in the fridge.
Like I said, these have been a lifesaver. I believe that I'm most likely to cheat in the morning because of a lack of preparation. And my fear is that if I cheat, it's over. So this has been a great way to start my morning off right and they're super delicious!
